What to do with all those veggies?

How about making a stir fry recipe?

Stir Fry is an easy dish to make and use up all of those vegetables.  You can really use almost any vegetables you have in the garden or fridge to make the bulk of the dish.  I made one last week and this is what I used:

  • shredded beef roast (made the day before in the crockpot)
  • broccoli
  • carrots
  • red pepper
  • green pepper
  • onion
  • bok choy
  • udon noodles, found in the refridgerator section of most health food stores
  • Ginger Lime sauce, by The “Ginger People” **
  • Soy Sauce made with Black Beans **

I chopped all the veggies, added some olive oil to a saute pan, added the onions first, let them cook, for 2-3 min, then added the rest of the vegetables and cooked for about 3-5 min. Udon noodles were next, then added the sauces, maybe a tablespoon or two of each.  Lastly I added the beef. Let all cook together for just a few minutes, and then we were ready to eat!
