Pumpkin Bars (GF/can be DF) with Maple Frosting

A GF (and could be DF as well), low sugar with lots of flavor treat for those pumpkin flavor lovers!

Ingredients
  • 2 cups GF flour blend King Arthurs/ Bob's Redmill/ Cassava/ Almond mixture
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp ground ginger
  • 1 tsp nutmeg
  • 1/4 cup butter melted
  • 2 tbsp coconut oil melted
  • 2 tbsp maple syrup
  • 2 tsp vanilla
  • 2 tbsp milk or coconut milk
  • 1 cup pumpkin puree
Maple Frosting
  • 1/2 cup butter or coconut oil
  • 1/3 cup maple syrup
  • 1/2 tsp cinnamon
  • 1.25 tbsp coconut flour or arrowroot powder
  • 2.5 tbsp milk or coconut milk
  • 1 tbsp coconut sugar optional
Instructions
  1. Mix all dry ingredients together including the spices. Melt butter and coconut oil, and add maple syrup, vanilla, milk, and pumpkin puree. Blend all together until smooth. The batter will be kind of thick compared to pancakes or cake mixes.

    8x8 greased or parchment lined glass pan

    Oven at 350 degrees

    Bake for 30-35 minutes

    Let the Bars cool before frosting with the Maple Frosting.

    Frost the Bars and serve room temp. Store the bars in the refrigerator.

Recipe Notes

This is a fantastic dessert that has a low amount of sugar! BUT because of the low amount of sugar, be very generous with your spices.  That seems to be the key when wanting that dessert to taste just right when you reduce the sugar.  Other note to consider: if you are going to use Cassava flour (I really like this one) or Coconut Flour, be cautious with the flour to liquid ratio.  These two flours tend to get on the dry and gritty side if you aren't careful.  Often I like to do half and half; half GF Flour Mix and half Cassava Flour.  Our family really enjoys this treat, I hope yours does too!
