Refreshing Chopped Cabbage Salad

This salad has hit the spot.  It is a great, quick salad with some fantastic flavor to really satisfy those taste buds.  Loaded with veggies for a fiber filled feeling, add some chicken or white beans for some protein, and this is a one bowl meal! Feeds a lot of people too!

Chopped Cabbage Salad Recipe:

One small head cabbage chopped

1 large cucumber diced

1/2 cup chives chopped

Optional: could add shredded carrot, or shredded purple cabbage to this as well.

2-3 chicken breasts seasoned and grilled/ frying pan (I used salt, pepper, chipotle powder, garlic powder, paprika)

1-2 avocadoes diced into chunks

1/2 cup spinach chopped

Dressing:

1/4 cup olive oil

1/4 cup chopped cashews (great for estrogen balancing by the way !)- I added a few more

1/2 cup cilantro chopped

2 cloves garlic, minced

splash rice vinegar

1 tbsp (or more! for cheesy flavor) nutritional yeast

juice of 3 limes (or a couple of tablespoons of organic lime juice- Teals even carries a nice organic one in the juice isle- cheaper than whole limes)

1 tsp salt
