Gingerbread Cookie Bars

Here is a nice dessert or snack that includes all the great fall spices. It would be easy to substitute your favorite sweeteners instead of the sugars to lower the carbs.

Throw these in the oven on a crisp fall day and fill your house with with the aroma of gingerbread.

Gingerbread Cookie Bars

Serves 24

  • ½ c butter melted
  • ½ c coconut sugar
  • ½ tsp vanilla
  • 1/3 c molasses
  • 1 egg
  • 2 tsp baking soda
  • 2 cup flour; 1 c almond flour 1 c gluten free baking blend
  • 1 Tbsp cinnamon
  • ¼ tsp ginger
  • ¼ tsp cloves
  • ¼ tsp nutmeg
  • ½ tsp salt
  1. 9X13 pan at 350degrees 15-20 minutes


Cream Cheese Frosting
  • 8 oz cream cheese softened
  • ¼ c. butter
  • 1 1/2 - 2 c. powdered sugar
  • 1 tsp vanilla
