Preheat oven to 350 degrees.
Spray a 12 cup muffin pan with non stick spray, and/or use muffin cup liners.
In a large mixing bowl, beat eggs. Add in the remaining ingredients and mix together.
Scoop 1/3 cup of mixture into each muffin cup or liner. Bake for 20-25 min. or until center of muffin is cooked through.
Can be stored in fridge in air tight container for up to 4-5 days or place individually wrapped in a freezer safe container for up to 60 days. Just reheat for about 30 seconds up to 10 second intervals until heated through.
